This is a recipe that I put together after reading the ingredients on some commercially-available products that were quite expensive. Experiment with the exact amounts, and try making different flavors. Just keep the sugar low or you will lose the wonderful energy and nutrition that these will provide. You may find that just one of these provides you (or your child) with good energy and lack of hunger for a couple of hours!
INGREDIENTS:
- 1 cup ground almonds (almond flour)
- 1 cup shredded coconut
- 2-3 Tbsp coconut oil
- 2 Tbsp maple syrup or ¼ tsp stevia (optional / to taste)
- ¼ tsp unrefined salt
Other optional ingredients (keep sugar content low) could be added as flavoring, for example:
- Vanilla extract
- Lemon or orange zest
- Finely diced apples and cinnamon
DIRECTIONS:
Roll into balls (smaller than golf ball size) and refrigerate for short time if they became warm and sticky during preparation. No cooking is involved. And they don’t need to be refrigerated unless they won’t be eaten within a week or so.
