Pie shell:
3 dl almonds
2 dl walnuts or pecans
1 dl coconut flour (ground coconut)
250-300 g soft dried dates without stones (use 250 g and add dates to the food processor
until you get the right texture)
2-3 tsp coconut oil
2 tsp pure vanilla powder
Put all the ingredients in the food processor and leave it on for about 4 minutes. You should end up with a “dough” that is very loose in its texture but very easy to shape/form. Put the dough in a pie form and use the hands to shape the pie bottom.
Filling:
3-4 ripe bananas
2 tsp pure vanilla powder
2 tsp Lucuma fruitpowder (or ½ spoon full of honey or agave syrup)
1-2 tsp Psyllium (ground)
500 g fresh or frozen berries or fruit
Put all the ingredients in the food processor and mix until you have a smooth texture. Put the filling in the pie and chill in the refrigerator.
