Sunflower Cakes (United States)

Ground sunflower seeds are the basis for this flourless treat.

INGREDIENTS:

2 cups sunflower seeds, soaked and dried
¼ cup carob powder
pinch stevia
½ tablespoon vanilla flavor
¼ cup chopped nuts
up to ½ cup filtered water

DIRECTIONS:

1. Preheat oven to 250 F.
2. Grind sunflower seeds to fine meal in food processor.
3. In large bowl, mix sunflower meal with carob powder, stevia, vanilla and
nuts.
4. Slowly add water and stir well. Add more water to get a thick, wet
consistency.
5. Place on buttered parchment paper and form into a rectangle.
6. Bake for 45 minutes.
7. Turn and bake a further 45 minutes until dry.

Serving suggestions: Serve topped with coconut butter
